I'm wondering why is there a knob to turn the dial mark on the altitude gauge?
How is it supposed to work?

The knob is to adjust for atmospheric pressure. Normal is 29.92 in/hg at sea level (14.7 psi). Weather can make for pressure swings.

So, once i determine my current altitude, i turn the knob to that value if not where it should be, right?

Yep, take a ride to the beach and set it to zero, or look at your GPS and find the altitude in your driveway.

I have a clock and an ambient temp gauge in my '81. I don't know what Honda was thinking. I cannot think of more useless instruments in a motorcycle than altimeter and ambient temp. How about oil pressure or oil temp?

I have all three and I agree with you. I like the clock though.
I've taken my speedo to get it cleaned up and calibrated and asked the guy if he would try to calibrate ambient temp gauge. He gave it a try and it's showing acurate temp just sitting in my room so I may try it using it again.
I've also acquired oil temp gauge off of vfr but haven't gotten around installing it yet
