use of fuel
When I go for about a 2 hour ride at about 120KMH I seem to suck up the fuel like it is going out of style. I know that the CBX is not a miser on gas but I cannot believe how fast the fuel is used up. Is this normal and what kind of gas milage should the bike be getting

Unfortunately, around 35 mpg is common, perhaps even lower. Late models, and some early models, will get 40 mpg, butnot under hard running. My own '79 routinely gets about 36 mpg riding curvy roads, but not flogging it.

fuel economy
As I always say, this is a hot running motorcycle that is liquid cooled. The liquid just happens to be gasoline. :)

My 82 gets low to mid 30s, but my 79 gets around 28-30 most days. In Yellowstone one day cruising every paved road I could find on the 82, I got it up to the mid 40s, but I was flower sniffin all the way. From Cody to Sheridan WY I only got, well, I stayed right around 6,500 to 7,500 revs all the way, sometimes higher. Uhh, the mileage suffered a bit... but it sure was a fun ride!
