I am in the process of setting the mixture after installing a Stage 1 Dyna Jet Kit (using the tried and true method of "reading the Plugs") and just wanted to confirm that to richen the mixture I turn the Air screws out or counter clockwise.

Correctomuno, but they are fuel screws, not air screws. That's way turning them out richens the idle circuit. :)
